You could also make a cake but our kitchen had been renovated and I couldn't find all my baking stuff! ;-;

- 125g butter
- 195g caster sugar
- 2 eggs
- 200ml buttermilk
- 2 tablespoons black food colouring
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons bicarbonate of soda
- 1 tablespoon vinegar
- 275g plain flour
- 5 tablespoons best quality cocoa powder
- 1 teaspoon salt
- Buttermilk substitute:
- 200ml milk
- 1 tablespoon lemon juice or vinegar
- What to do:
- 1) In a mixing bowl cream the butter and sugar together until light and fluffy. Then add in your two eggs. Beat until doubled in volume and pale in colour.
- 2) Into a small bowl, add in your vanilla extract, food colouring, vinegar and bicarbonate soda. It will bubble. Set aside.
- 3) Mix the flour, cocoa powder and salt together. Add in the egg mixture and the food colouring mixture. Mix well until incorporated, slowly adding in your buttermilk. When your mixture is at a smooth and ribbon-like constancy stop mixing to avoid a dry and tough mixture. Into your baking trays add the batter and bake at 180 degrees celcius.
- Baker tip: To check for doneness insert a skewer into the centre of one cupcake and if it comes out with no wet batter or crumbs on it then your cupcake is done.
- 4) take your cupcakes out and leave them to cool completely before adding frosting of your choice. Cream cheese is well suited for this recipe.
